having a serious moment with this coconut couscous. it’s the third time i’ve made it this month. did i mention it’s 2 ingredients? 3 if you count salt. “recipe” as follows: use equal parts couscous and coconut milk. i used @traderjoes whole wheat couscous and light canned coconut milk. bring coconut milk to a boil in a saucepan. once boiling, pour in couscous, turn off the heat, add a little salt, stir, and cover for 5 minutes. then it’s ready. literally that’s it! // argentinian red shrimp with coconut couscous and ginger garlic shiitake mushrooms with bok chia. veg recipe by @iheartumami.ny #coconutcouscous #bokchoy #umami

After a slash of 🌧 , sun is out...and some chicken 🍗 kebabs (bone-in) hot-off-the-oven too! Chicken leg portions were cut into smaller chunks, then marinated with olive oil, sour cream, ginger-garlic paste, cracked peppercorns, roasted ground cumins, paprika, a pinch homemade ground roasted Garam masala & salt overnight. Roasted those on an iron skillet inside preheated (350f) oven for 20 mins & broiled (550) for 5-7 mins to give those lightly blackened look! This past weekend I made my strawberry crumble bars to take to a friend’s house...with diced peaches and plums instead of strawberries! I used the exact same volume of fruit and kept all other ingredients the same. They were awesome! This is what I love about baking - one little tweak and you have a totally new recipe. . Sprinkled Granola Bites It’s time. It’s THAT time. It’s Back to School. The kids gotta get up early. The pin boards are LIT. No really, there’s so many friggin’ pin boards out there on the internet. SDFHTRHGDF*POOPEMOJIS*DSFSGFSAS. What’s the one thing that was put in your lunch as a kid that you were just like “meh” 100% of the time? Granola bars. What’s left in the pantry to throw in? Groan. Woof. I’ve actually never made granola until now. Small victories people. If it’s a no bake recipe, I’m totally down to party. Let’s stop giving granola a bad name for the kids, and even for yourselves. Make. These. Now. PLOT TWIST - They’ve got sprinkles. Who doesn’t love sprinkles?! I don’t have kids, but I DO have plants. But this plant momma needs some on-the-go boosts for breakfast. That’s showbiz baby. Ingredients: 1/2 C PB, 1/2 T Coconut Oil, 3 T Honey, 1 T Almond Extract, 1/2 t Cinnamon, 1/3 C Flaxseed Meal, 1 T Chia Seeds, 1/2 C Bobs Red Mill Steel Cut Oats, 1/3 C Almond Shavings, 1/2 C Sprinkle Mix, 1/2 C Rice Cereal Instructions: Add PB, coconut oil, honey and almond extract to medium heat pan until mixed and creamy. Remove from heat and stir in remaining ingredients into loaf pan lined with parchment. Press in extra sprinkles on top. Melt 1/2 C chocolate chips with coconut oil and pour over granola. Add more almonds. Refrigerate for 2 hours. zoodles & turkey meatballs🍝 - super simple & quick dinner. took me less than 30 min to prepare it👏🏼 - meatballs: preheat oven to 425° & line baking sheet with parchment paper. in a bowl, add 1 lb. organic ground turkey, 1 tsp salt, 1/2 tsp pepper, 1/2 tsp garlic powder, 1 tsp italian seasoning, & 1/4 c. almond flour. stir until just combined. form into 1 inch balls (i love using a cookie scoop so that i don’t have to touch the turkey😝) & bake for 14 min. flip over & broil for another 2-3 min. - mushrooms: slice mushrooms & add to a pan with ghee, salt, & pepper. sauté on medium to your liking. - zucchini noodles (zoodles): put zucchini through a spirilizer. i used a whole zucchini for 1 serving. take a paper towel & squeeze the zoodles, getting out the excess moisture. add to pan & sauté for 2 min on medium. don’t overcook! - top with organic red sauce. i also added some nutritional yeast for a cheesy flavor 😋

. . _____________________________ Parmesan Crusted Chicken _____________________________ . . My kids have been swimming a lot lately, the weather hasn’t been “swim worthy” but fortunately the pool is heated. . . When they come back from a dip they’re hungry, but also you don’t want to have a heavy meal after a swim so here is a wonderful light appetizer, this can also be served as a side to an actual meal or even be eaten on its own. It’s also great for a party starter. . . If you’re someone who’s often short on time but still wants something delicious and homemade for dinner, this is the perfect recipe for you. . . Ingredients For the Parmesan Crusted Chicken: 1.25 lbs chicken cutlets (I had 4) salt and pepper 1 sprig fresh rosemary 1 cup grated or zested parmesan cheese 2 eggs 1 cup panko bread crumbs 1/4 cup olive oil for frying . . Instructions Lay the chicken breasts out on a cutting board and season them generously on both sides with salt and pepper. Set aside. Next it’s time to set up your breading station. Set out three bowls, and in the first bowl add the zested parmesan cheese, then the eggs in the second bowl, and the panko bread crumbs in the third. Strip the leaves from the fresh rosemary sprig and mince them finely with a knife. Add the minced rosemary to the egg bowl, then whisk the eggs and rosemary together until combined. Heat up a large skillet over medium heat, and let it heat up while you bread the chicken. First dip each chicken cutlet into the parmesan, shake off the excess, then dip into the egg, then let the excess drip off, then finally dip into the panko bread crumbs (by the way, the reason we shake off the excess during each step is to prevent our breading from falling off later). When the pan is nice and hot, add enough olive oil to coat the bottom of the pan, about 2-3 tbsp. Add 2 or 3 chicken cutlets to the hot oil (do not crowd the chicken cutlets), and cook for 4-5 minutes on each side, until golden and crispy. If the bread crumbs are browning too quickly, you can turn the heat down. Repeat with the remaining cutlets, and enjoy!

aronia berries | yesterday I was feeling overwhelmed + in need of a little something special. the kiddos had spent the morning harvesting aronia berries from the garden. so i thought i’d try and put them to good use. have you ever heard of or had aronia berries before? if you have, how do you use them?? they are pretty sour. this is the first year we’ve had a big enough harvest to use.
