TRUTH: Before I tried meal prepping, I was overwhelmed at the thought of it. It seemed like SO much work! And then it clicked....if I used the same ingredients in different ways, it could be done! Sounds simple, but hey, anxiety definitely makes things seem like bigger tasks than they are.
Soooo, this week I’ll use these ingredients for #breakfast AND #lunch making egg white omelettes and using whatever leftover protein from the night before (today it’s crispy honey lemon salmon!) with the same breakfast veggies for my salad. I also never took portions into consideration when it came to fruit 🍉🍎🍌. I either didn’t eat enough or ate too much. Guess what, portions count!!! Every day I do my best to eat 4 cups of veggies, 9-12oz protein, 2 cups of fruit and 1.5 cups of healthy carbs (think sweet potatoes, brown rice, lentils). I rarely use salt (lemon and any sort of spice does wonders)and use avocado oil sparingly. I don’t feel like I’m missing out, I still eat out and improvise when necessary (because hello, kids! 😂). Eating healthy doesn’t have to be a chore and you DON’T have to limit yourself to only healthy food (I still enjoy my 🍕🍺Fridays)
